Fall Dessert Recipe: Pumpkin Snickerdoodles

We’re embracing the fall weather that’s gradually coming our way here in Utah by getting excited about all that comes with the new season, from the collection of cinnamon scented candles to sweaters that show up at every store. The many fall recipes that have been featured on our social feeds are endless, so we had to try the trending pumpkin snickerdoodles one you may have come across as well. The pumpkin snickerdoodle cookie recipe we found and tried out was inspired by the palatable lifeand we put a little twist to it by adding in white chocolate chips. These snickerdoodles will make the perfect addition to any gathering you may have coming up this fall, whether you’ll be hosting or attending. Grab a friend or loved one and get baking! Ingredients:

  1. 1/2 cup butter
  2. 1 cup brown sugar
  3. 2/4 cup pumpkin puree
  4. 1 egg
  5. 1 tsp vanilla 
  6. 1 tsp sour cream
  7. 1/2 tsp salt
  8. 1/2 tsp cream of tartar
  9. 1/2 tsp baking soda
  10. 1 tsp pumpkin pie spice
  11. 2 cups flour 
  12. 1 cup white chocolate chips 

For sugar coating: 

  1. 1 tbsp sugar 
  2. 1 tbsp cinnamon 

Instructions:

  1. In a stand mixer or large bowl, mix together the butter and brown sugar until fully blended. 
  2. Add in the pumpkin puree, egg, vanilla, and sour cream. Blend. 
  3. Mix in the flour, pumpkin pie spice, salt, baking soda, and cream of tartar. 
  4. Add in the white chocolate chips to the cookie mixture. 
  5. Place in fridge to chill for about 30 minutes. 
  6. While the cookies are chilling in the fridge, prep the sugar coating by mixing the sugar and cinnamon together in a small bowl. 
  7. Take cookies out of fridge after 30 minutes, roll the dough to form each cookie and then dip into the sugar mix and coat the outside. 
  8. Preheat oven to 350 degrees. 
  9. Place on cookie sheet and bake for 10-12. 
  10. Let them cool down for a few minutes. Enjoy!
